800g boned rabbit
20 lemon leaves
2 cloves of garlic
4 tablespoons extra virgin olive oil
90 ml white wine
salt and pepper to taste
fresh vegetables to use as a side dish
Each nibble of size less than that of a punch must be wrapped in a leaf of lemon. Use a small stick or toothpick to stop well the lemon leaf around the rabbit.
Once ready, the rolls are baked in a pan with oil and a clove of garlic. It is cooked in the oven at 200 degrees for about 30 minutes.

Halfway through cooking, remove the pan and pour in the white wine. Serve the rolls with a colorful side dish of seasonal vegetables.
